After starting his career at the Ritz in 1972 and then working in Deauville, Normandy, he ventured off, for 12 years, to the United States.

First San Francisco at the Radisson chain of hotels where he set all the standards for the bars. Then he opened three bed and breakfasts.
Back to Paris as Head Barman for the George V before it closed.
Ever restless, it’s Australia that enticed him to stay for 2 years at Veuve Clicquot.

Finally back in France, he took up residence at the Jaipur, the Lounge Bar of the Hôtel Vernet where, for some years now, he has been applying the same enthusiasm and verve to selling, every evening, not merely a cocktail but a moment of dream.
