The career of an authentic chef

Eric BRIFFARD is both an authentic and a passionate chef who is driven by a belief in all that is real and in the art of good living.
 
Eric is a man who rises to challenges:
 
At the age of 20 he joined the highly-reputed Compagnonnage  school
and met his first masters, Marc MENEAU and Philippe GROULT.
 
At 27, he was appointed chef de cuisine for the opening of the Palazzo Royal Park Hôtel, in Tokyo, Japan.
 
He was soon to learn what it takes to become a “great chef”, the ability to develop one’s own style and repertoire and to create “signature dishes”.
 
Joël ROBUCHON then offered him the job of chef at the “Jamin”.
This was to prove to be a decisive turning point for Eric BRIFFARD; he became one of Joël ROBUCHON’s favourite followers.
 
The President of France awarded him the Meilleur Ouvrier de France medal at the age of 32.
 
In 1996, Hervé HOUDRE entrusted him with the kitchens at the Plaza Athénée Paris. 
 
In 2000 he was awarded two stars by the Red Michelin Guide, 18/20 by Gault-Millau and named chef of the year by the food press. 
En 2002, he took over the restaurant Les Elysées at the Vernet.
